Recipe: Lemon Poppyseed Overnight Oats
As crazy as my weekday mornings are, I can never skip breakfast. Now I may not be able to scramble up some eggs with toast every morning, but I do enjoy prepping meals ahead of time and one of my favorite go-tos is overnight oats.
I love making overnight oats because it’s healthy and so simple to make. It’s also a grab-able breakfast so I can prep the ingredients the night before, store in a jar, so it’s ready available for me to eat or take on-the-go!
As much as I love it, I do have this tendency to stick to the same old recipes or reach for the same toppings which can get boring. So, I decided to switch things up and try something completely different.
This Lemon Poppyseed Overnight Oats recipe is fresh, creamy and super filling. I used almond milk instead of coconut milk and added Turmeric and lemon zest to the oat mixture. I used greek yogurt too but, you can make this completely vegan by using a dairy-free yogurt instead.
Lastly, I tried different toppings like coconut flakes and kiwi to complete this summery recipe!
Lemon Poppyseed Overnight Oats
Ingredients
- 1/3 cup of rolled oats
- 1/2 cup of unsweetened vanilla almond milk (or milk of your choice)
- 2 tbsps of plain greek yogurt (or a dairy-free yogurt to make it Vegan!)
- 1/2 tbsp of poppy seeds
- 2 tsp of maple syrup (or more for taste)
- 1 tsp of lemon juice
- 1/4 tsp of lemon zest
- 1/8 tsp of Turmeric (for color)
- Optional toppings: kiwi, granola, coconut flakes
Serving size: 1
Instructions
Step 1. Combine all ingredients in a jar or reusable container and mix well.
Step 2. Cover and let sit in the fridge overnight or at least 5-6 hours.
Step 3. The next day, open container, stir, add desired toppings, and go! If preferred, you can also empty the container into a bowl, add your toppings and enjoy at home!
